Instructions

Step 1 – Bake the Bottom Pastry

  1. Preheat oven to 180°C (350°F).
  2. Line a 9×13-inch baking pan with parchment paper.
  3. Place one sheet of puff pastry in the pan and prick with a fork.
  4. Bake for 12–15 minutes until lightly golden.

Step 2 – Prepare the Filling

  1. Beat the egg yolks with the sugar until pale.
  2. Add the túró, sour cream, vanilla, lemon zest, and cornstarch.
  3. Mix until smooth.

Step 3 – Whip the Egg Whites

  1. Beat the egg whites with a pinch of salt until stiff peaks form.
  2. Fold them gently into the cheese mixture.

Step 4 – Assemble

  1. Spread the filling evenly over the baked pastry.
  2. Cover with the second sheet of puff pastry.

Step 5 – Bake

  1. Bake for 35–40 minutes, until the top is golden and the filling is set.
  2. Cool completely before slicing.

Step 6 – Finish

Dust generously with powdered sugar before serving.

Tips

  • Chill for 2–3 hours before cutting for clean slices.
  • Hungarian túró gives the most authentic flavor, but well-drained ricotta is a good substitute.
  • Serve cold with fresh berries or a cup of coffee.
