
Instructions
Step 1 – Bake the Bottom Pastry
- Preheat oven to 180°C (350°F).
- Line a 9×13-inch baking pan with parchment paper.
- Place one sheet of puff pastry in the pan and prick with a fork.
- Bake for 12–15 minutes until lightly golden.
Step 2 – Prepare the Filling
- Beat the egg yolks with the sugar until pale.
- Add the túró, sour cream, vanilla, lemon zest, and cornstarch.
- Mix until smooth.
Step 3 – Whip the Egg Whites
- Beat the egg whites with a pinch of salt until stiff peaks form.
- Fold them gently into the cheese mixture.
Step 4 – Assemble
- Spread the filling evenly over the baked pastry.
- Cover with the second sheet of puff pastry.
Step 5 – Bake
- Bake for 35–40 minutes, until the top is golden and the filling is set.
- Cool completely before slicing.
Step 6 – Finish
Dust generously with powdered sugar before serving.
Tips
- Chill for 2–3 hours before cutting for clean slices.
- Hungarian túró gives the most authentic flavor, but well-drained ricotta is a good substitute.
- Serve cold with fresh berries or a cup of coffee.
