Knead for 8–10 minutes until the dough is smooth, soft, and elastic.
Cover and let rise in a warm place for 1–1½ hours, or until doubled in size.
Step 2 – Shape the Doughnuts
Turn the dough onto a lightly floured surface and roll it to about ½ inch (1.25 cm) thick.
Cut out circles using a 3-inch (7–8 cm) round cutter.
Place the rounds on a floured tray, cover with a towel, and let them rise again for 30–40 minutes.
Step 3 – Fry
Heat the oil to 340–350°F (170–175°C).
Fry the doughnuts in batches for 2–3 minutes per side, until golden brown.
Transfer to a wire rack lined with paper towels to drain.
Step 4 – Fill
Once slightly cooled, use a piping bag fitted with a filling tip to inject each doughnut with about 1 tablespoon of apricot jam.
