Instructions

1. Make the Pancake Batter

Whisk together the eggs, milk, sparkling water, salt, and oil.

Gradually add the flour and whisk until you have a smooth, thin batter.

Allow the batter to rest for approximately 15–20 minutes.

2. Cook the Pancakes

Heat a lightly oiled skillet over medium-high heat.

Pour in a small amount of batter and quickly swirl the pan to create a thin pancake.

Gradually add a little of the hot reserved cooking liquid to temper the sour cream.

Stir the mixture back into the remaining paprika sauce.

Cook gently until slightly thickened.

If necessary, add a little broth to achieve a smooth, pourable consistency.

Taste and adjust the seasoning.

7. Bake

Preheat the oven to 375°F (190°C).

Pour some of the paprika sauce over the stuffed pancakes.

Bake for approximately 15–20 minutes, until thoroughly heated.

8. Serve

Place the hot Hortobágyi Palacsinta onto plates and spoon plenty of warm paprika sauce over the top.

Finish with a small spoonful of sour cream and fresh parsley if desired.
