Hungarian Pork Pörkölt with Nokedli

Hungarian Pork Pörkölt with Nokedli

There are some Hungarian dishes that immediately capture the heart of traditional home cooking, and Hungarian Pork Pörkölt with Nokedli is one of them. Rich, deeply savory, and generously flavored with sweet Hungarian paprika, this rustic stew is the kind of meal that feels both comforting and wonderfully satisfying.

Served alongside soft, homemade nokedli—Hungarian egg dumplings—the thick paprika-infused sauce clings beautifully to every bite. It is a classic combination that belongs on any Hungarian comfort-food table.

What Is Hungarian Pörkölt?

Pörkölt is a traditional Hungarian stew made by slowly cooking meat with onions, paprika, and other seasonings until the meat becomes tender and the sauce develops a rich, concentrated flavor.

Unlike goulash soup, which is generally much thinner and more brothy, pörkölt has a thicker, more substantial sauce.

Pork is one of the most popular choices, although pörkölt can also be prepared with beef, chicken, or other meats.

The defining ingredient is Hungarian paprika, which gives the dish its characteristic deep red color and warm, slightly sweet pepper flavor.

Why This Dish Is So Special

The beauty of pörkölt is its simplicity.

There is no need for a long list of complicated ingredients. Onions, paprika, pork, garlic, tomatoes, peppers, and a few seasonings slowly transform into an intensely flavorful stew.

The real magic happens during the cooking process. As the pork gently simmers, it becomes tender while the paprika and onions create a thick, aromatic sauce.

And when that sauce is spooned over freshly made nokedli, the result is incredibly comforting.
