  4. Fill the casings: Rinse and soak the casings, then stuff them with the sausage mixture. Avoid filling them too tightly.
  5. Shape: Twist the sausage into long links or traditional coils.
  6. Dry: Hang the sausages in a cool, well-ventilated place until the surface is dry.
  7. Smoke: For traditional smoked kolbász, smoke using a controlled food-safe smoking process until properly cured and cooked according to your smoker’s instructions.
  8. Serve: Slice thinly and enjoy with fresh bread, mustard, pickles, peppers, or as part of a Hungarian cold-cut platter.
