Instructions
1. Prepare the Meat
Keep the pork and fat very cold before grinding.
Grind the pork shoulder through a coarse plate. Keep the fat cold as well.
2. Season the Mixture
Place the ground pork and fat in a large bowl.
Add the paprika, garlic, salt, black pepper, and caraway seeds.
Gradually add the cold water and mix thoroughly until the seasoning is evenly distributed and the mixture becomes slightly sticky.
3. Test the Seasoning
Before filling the casings, cook a small portion of the mixture thoroughly in a skillet.
Taste it and adjust the paprika, garlic, salt, or pepper if necessary.
4. Prepare the Casings
Rinse the natural casings thoroughly and soak them according to the package instructions.
Keep them moist while preparing the sausage.
5. Fill the Sausages
Stuff the seasoned meat mixture into the casings using a sausage stuffer.
Avoid packing them excessively tight.
Twist or tie the sausages into your preferred lengths and carefully remove any obvious air pockets.
6. Dry Before Smoking
Hang the sausages in a clean, cool, well-ventilated area until the surface is dry.
For any cured or smoked sausage intended for storage without cooking, use a tested curing and smoking process with the correct curing salt and controlled temperature/humidity rather than relying on a home recipe alone.
7. Smoke
For traditional smoked kolbász, use a food-safe smoker and hardwood smoke according to the smoker and curing-salt manufacturer’s directions.
Keep the smoking temperature within the safe range specified for the particular curing process.
8. Finish and Store Safely
Once properly smoked and cured, allow the sausages to mature according to the validated process being used.
For a home version without a validated curing/maturation setup, the safest option is to cook the sausage thoroughly after smoking and refrigerate it, rather than treating it as shelf-stable.
