Hungarian Túrós Batyu (Sweet Cottage Cheese Pastries)

Instructions

Step 1 – Prepare the Dough

Mix the warm milk, yeast, and a teaspoon of sugar. Let stand for 10 minutes until foamy. Add the flour, remaining sugar, butter, eggs, vanilla, and salt. Knead for 8–10 minutes until smooth. Cover and let rise for about 1 hour, or until doubled.

Step 2 – Make the Filling

Combine the cottage cheese, sugar, egg yolk, vanilla, lemon zest, semolina, and raisins if using. Mix until creamy.

Step 3 – Shape the Pastries

Roll the dough to about 5 mm (¼ inch) thick. Cut into 10–12 cm (4–5 inch) squares. Spoon filling into the center of each square. Fold the corners toward the center, leaving a little filling visible.

Step 4 – Second Rise

Arrange the pastries on a parchment-lined baking tray. Cover loosely and let rise for 25–30 minutes.

Step 5 – Bake

Brush with beaten egg and bake in a preheated oven at 180°C (350°F) for 18–22 minutes, until golden brown.

Step 6 – Finish

Allow to cool slightly, then dust generously with powdered sugar before serving.
