- 8 lb (3.6 kg) pork shoulder
- 3 lb (1.4 kg) pork back fat
- 6 tablespoons Hungarian sweet paprika
- 2 tablespoons Hungarian hot paprika (adjust to taste)
- 2 tablespoons kosher salt
- 2 teaspoons freshly ground black pepper
- 2 teaspoons ground caraway seeds
- 8 garlic cloves, finely minced
- ½ cup (120 ml) cold water
- Natural hog casings, soaked and rinsed
