Hungarian Szalontüdő (Sour Lung Ragout)

Hungarian cuisine is famous for goulash, paprikash, stuffed cabbage, and countless comforting dishes—but some of its most traditional recipes are much less familiar outside Hungary.

Szalontüdő, also known as savanyú tüdő or pájsli, is one of these old-fashioned specialties. It is a rich, tangy Hungarian ragout traditionally prepared with pork lung and heart, slowly cooked with aromatic seasonings and finished with a creamy, slightly sour sauce.

What Is Szalontüdő?

For the Offal

  • 1 kg pork lung
  • 500 g pork heart
  • 1–2 onions
  • 2–3 bay leaves
  • 1 teaspoon whole black peppercorns
  • Salt, to taste
  • Water, as needed

For the Sauce

  • 2 tablespoons oil or lard
  • 2 tablespoons flour
  • 1 tablespoon sugar
  • 1 teaspoon sweet Hungarian paprika
  • 2 dl sour cream
  • 1–2 tablespoons mustard
  • Juice of ½ lemon
  • A little grated lemon zest
  • 1 small pickled cucumber, finely chopped, optional
  • Ground black pepper, to taste
  • Salt, as needed
