
Hungarian Chicken Paprikash, or Paprikás Csirke, is one of Hungary’s best-loved comfort foods. Tender chicken is gently simmered with onions and sweet Hungarian paprika before being finished with sour cream for a rich, silky sauce.
The traditional accompaniment is nokedli, small Hungarian egg dumplings that are perfect for catching every bit of the creamy paprika sauce.
Ingredients
For the Chicken Paprikash
- 2½–3 lb bone-in chicken thighs and drumsticks
- 2 tablespoons vegetable oil or lard
- 2 large onions, finely chopped
- 3 cloves garlic, minced
- 2 tablespoons sweet Hungarian paprika
- 1 medium tomato, diced
- 1 green bell pepper, diced
- 1½ cups chicken broth or water
- 1 teaspoon salt
- ½ teaspoon black pepper
- ½ teaspoon caraway seeds, optional
- ¾ cup sour cream
- 1 tablespoon all-purpose flour
- 1 tablespoon chopped fresh parsley
For the Nokedli Dumplings
- 2 cups all-purpose flour
- 3 large eggs
- ½ teaspoon salt
- ¾ cup water, approximately
- 1 tablespoon butter, optional
