Hungarian Dobos Torte

Instructions

1. Prepare the Sponge Batter

Preheat the oven to 375°F (190°C).

Beat the egg yolks with half of the sugar until pale and creamy.

In a separate bowl, beat the egg whites with the remaining sugar until stiff and glossy peaks form.

Gently fold the yolks into the whites.

Sift in the flour and salt, then carefully fold in the melted butter and vanilla.

2. Bake the Thin Layers

Spread the batter into several very thin, even circles or rectangles on parchment-lined baking sheets.

Bake for approximately 7–10 minutes, or until lightly golden and springy.

Allow the layers to cool completely.

3. Make the Chocolate Buttercream

Beat the softened butter and powdered sugar until light and fluffy.

Add the melted chocolate, vanilla, and salt.

Beat until smooth and creamy.

4. Assemble the Cake

Choose the best-looking sponge layer to use for the caramel topping.

Place another sponge layer on a serving plate and spread a thin, even layer of chocolate buttercream over it.

Continue layering sponge and buttercream until all the layers have been used, finishing with buttercream around the top and sides.

Refrigerate the cake while preparing the caramel.

5. Prepare the Caramel

Place the sugar and water in a small saucepan over medium heat.

Cook without stirring until the sugar melts and becomes a deep golden amber color.

Carefully stir in the butter.

6. Make the Caramel Top

Immediately pour the hot caramel over the reserved sponge layer.

Quickly spread it into a thin, even layer.

While the caramel is still warm, carefully score and cut the layer into triangular pieces.

Work quickly because the caramel hardens fast.

7. Finish the Cake

Arrange the caramel pieces around the top of the cake.

Use small peaks of chocolate buttercream underneath the pieces to hold them at an angle.

Refrigerate until the cake is firm.

Tips for Perfect Dobos Torte

  • Keep the sponge layers very thin and evenly baked.
  • Don’t overbake the sponge or it may become difficult to layer.
  • Make sure the chocolate has cooled before adding it to the buttercream.
  • Use a sharp knife when cutting the caramel layer.
  • Work quickly with the caramel because it hardens rapidly.
  • Allow the assembled cake to chill before serving.

How to Serve

Let the Dobos Torte sit at room temperature for about 10–15 minutes before slicing.

Serve thin slices with:

  • Coffee
  • Espresso
  • Black tea
  • Hot chocolate
  • Fresh berries

The slight warmth softens the buttercream while keeping the caramel crisp.
