Instructions
1. Prepare the Sponge Batter
Preheat your oven to 375°F (190°C).
Beat the egg yolks with half of the sugar until pale and creamy.
In another bowl, beat the egg whites with the remaining sugar until stiff, glossy peaks form.
Gently fold the yolk mixture into the egg whites.
Sift in the flour and salt, then carefully fold everything together. Finally, fold in the melted butter and vanilla.
2. Bake the Thin Layers
Spread the batter into very thin, even layers on parchment-lined baking sheets.
Bake each layer for approximately 7–10 minutes, until lightly golden and springy to the touch.
Allow the sponge layers to cool completely.
For the most traditional appearance, aim for several thin layers rather than a few thick ones.
3. Make the Chocolate Buttercream
Beat the softened butter and powdered sugar until light and fluffy.
Gradually add the cooled melted chocolate.
Add vanilla and a pinch of salt, then beat until smooth and creamy.
4. Assemble the Cake
Choose the most attractive sponge layer for the caramel top.
Place one sponge layer on a serving plate and spread a thin, even layer of chocolate buttercream over it.
Continue stacking the sponge layers with buttercream between each one.
Cover the top and sides with a thin layer of chocolate buttercream.
Refrigerate the cake while preparing the caramel.
5. Prepare the Caramel
Place the sugar and water in a saucepan over medium heat.
Allow the sugar to melt and cook until it turns a deep golden amber color.
Carefully stir in the butter.
6. Create the Signature Caramel Top
Immediately pour the hot caramel over the reserved sponge layer.
Quickly spread it into a thin, even layer.
While the caramel is still warm, carefully score and cut it into triangular pieces.
The caramel hardens quickly, so work carefully and efficiently.
7. Finish the Cake
Arrange the caramel pieces on top of the cake, slightly angled if desired.
Pipe small decorative peaks of chocolate buttercream underneath or between the caramel pieces to hold them securely.
Refrigerate until the cake is firm.
