
Hungarian Green Pea Soup with Pinch Noodles (Zöldborsóleves)
Zöldborsóleves is a classic Hungarian vegetable soup made with sweet green peas, carrots, parsley, and small homemade noodles. It is light yet satisfying and is especially popular as a comforting homemade first course.
The tiny pinch noodles are made from a simple egg dough and dropped directly into the simmering soup, giving every spoonful a little homemade texture.
Ingredients
For the Soup
- 3 cups fresh or frozen green peas
- 2 carrots, peeled and sliced
- 1 small onion, finely chopped
- 1 small parsley root or parsnip, sliced
- 2 tablespoons vegetable oil
- 1 tablespoon all-purpose flour
- 1 teaspoon sweet Hungarian paprika
- 6 cups chicken or vegetable broth
- 1 bay leaf
- ½ teaspoon salt, or to taste
- ¼ teaspoon black pepper
- 2 tablespoons fresh parsley, chopped

- ¾ cup all-purpose flour, approximately
