In Hungarian, zöldborsó means green peas and leves means soup.

- 2 medium carrots, peeled and sliced
- 1 small parsnip, peeled and sliced
- 1 small onion, finely chopped
- 2 tablespoons vegetable oil
- 1 tablespoon all-purpose flour
- 1 teaspoon Hungarian sweet paprika
- 8 cups (2 liters) vegetable or chicken broth
- 1 bay leaf
- ½ teaspoon salt, or to taste
- ¼ teaspoon black pepper
- 2 tablespoons fresh parsley, chopped

- 1 egg
- Pinch of salt
