1. Prepare the pork

Place the pork loin on a cutting board and carefully butterfly it so that it opens into a large, relatively even piece.

Cover with plastic wrap and gently pound the thicker areas to create an even thickness.

Season both sides with salt, pepper, paprika, garlic, and marjoram.

2. Make the stuffing

Heat the butter or oil in a skillet.

Add the chopped onion and cook until soft. Add the garlic and cook briefly.

Place the bread cubes in a large bowl. Add the sautéed onion and garlic, chopped hard-boiled eggs, parsley, and marjoram.

Pour in the beaten egg and milk. Season with salt and pepper and mix until the stuffing holds together without becoming too wet.

3. Fill the pork

Spread the stuffing evenly over the opened pork loin, leaving a small border around the edges.

Carefully roll the pork tightly around the filling.

Tie the roast securely with kitchen twine at several intervals so it keeps its shape during cooking.

4. Roast

Preheat the oven to 350°F (175°C).

Place the stuffed pork in a roasting pan and brush the outside with a little oil.

Roast until the pork reaches a safe internal temperature of 145°F (63°C) in the thickest part.

The exact cooking time will depend on the size and thickness of the roast, but it will generally take around 60–90 minutes.

5. Rest and slice

Remove the roast from the oven and let it rest for 10–15 minutes before slicing.

Remove the kitchen twine, then cut the pork into thick slices.
