Traditional Hungarian Goulash Soup (Gulyásleves)

Hungarian Goulash Soup, known as Gulyásleves, is one of Hungary’s most beloved traditional dishes. Unlike thick goulash stew, this version is a hearty soup with tender beef, potatoes, vegetables, paprika, and a flavorful broth.

It’s rustic, warming, and especially satisfying on a cold day.

Ingredients

  • 1½ lb beef chuck, cut into bite-sized pieces
  • 2 tablespoons lard or vegetable oil
  • 1 large onion, finely chopped
  • 2 cloves garlic, minced
  • 2 tablespoons sweet Hungarian paprika
  • 1 teaspoon caraway seeds
  • 2 medium carrots, sliced
  • 1–2 parsnips, sliced
  • 4 medium potatoes, peeled and cubed
  • 1 tomato, chopped
  • 1 green bell pepper, chopped
  • 6 cups beef broth or water
  • 1 teaspoon salt, or to taste
  • ½ teaspoon black pepper
  • 1 bay leaf
  • Fresh parsley, chopped

Optional Small Dumplings

  • ½ cup all-purpose flour
  • 1 egg
  • Pinch of salt
