Hungarian Goulash Soup (Gulyásleves)

Instructions

  1. Sauté the onions: Heat the lard or oil in a large pot. Add the onions and cook until soft and golden.
  2. Add the paprika: Remove the pot briefly from the heat and stir in the Hungarian paprika to prevent it from burning.
  3. Cook the beef: Add the beef, garlic, caraway seeds, salt, and pepper. Stir well and cook for several minutes.
  4. Add the vegetables: Stir in the tomatoes and bell pepper. Add the broth or water and bring to a gentle boil.
  5. Simmer: Cover and simmer for about 1–1½ hours, until the beef becomes tender.
  6. Add carrots and potatoes: Stir in the carrots and potatoes and continue cooking for about 20–25 minutes.
  7. Add the dumplings: Add the csipetke and cook for another 5–8 minutes, until tender.
  8. Serve: Taste and adjust the seasoning. Serve hot with fresh bread.
