
Instructions
1. Prepare the Cabbage
Bring a large pot of salted water to a boil.
Carefully place the cabbage into the water and remove the leaves one at a time as they soften.
Continue until you have enough large, flexible leaves.
Allow the leaves to cool, then trim the thick central veins if necessary.
2. Make the Filling
In a large bowl, combine the ground pork, uncooked rice, chopped onion, garlic, paprika, salt, pepper, and egg if using.
Mix thoroughly until everything is evenly combined.
3. Roll the Cabbage
Place a cabbage leaf flat on a work surface.
Add a portion of the filling near the bottom of the leaf.
Fold the sides inward and roll tightly into a package.
Don’t make the rolls excessively tight because the rice will expand as it cooks.
Repeat with the remaining cabbage and filling.
4. Prepare the Pot
Heat the lard or oil in a large heavy pot.
Remove from the heat and stir in the paprika.
Spread some sauerkraut across the bottom of the pot.
Add a few pieces of smoked sausage or pork.
5. Layer the Cabbage Rolls
Arrange the cabbage rolls over the sauerkraut.
Add more sauerkraut and smoked meat between the layers.
Continue until everything is used, finishing with sauerkraut on top.
Add the bay leaves.
6. Simmer Slowly
Pour in enough water or broth to come most of the way up the cabbage rolls.
Cover and bring to a gentle simmer.
Reduce the heat and cook for approximately 1½–2 hours, until the cabbage is very tender and the meat is fully cooked.
Avoid vigorous boiling, which can cause the rolls to fall apart.
7. Rest Before Serving
Turn off the heat and let the cabbage rolls rest for 10–15 minutes.
This allows the flavors to settle and makes the rolls easier to serve.
How to Serve
Place two or three cabbage rolls in a bowl with plenty of sauerkraut and some of the flavorful cooking liquid.
Add a generous spoonful of sour cream on top.
Serve with fresh crusty bread and, if desired, Hungarian pickled peppers.
Tips for Perfect Töltött Káposzta
Don’t overfill the cabbage leaves. The rice expands during cooking.
Use good Hungarian paprika. It provides much of the dish’s characteristic flavor and color.
Cook slowly. Gentle simmering creates tender cabbage and juicy filling.
Use smoked meat for extra flavor. Smoked sausage or pork adds a wonderful savory depth.
