Hungarian Stuffed Peppers (Töltött Paprika)

Instructions

Step 1 – Prepare the Filling

Mix the ground meat, uncooked rice, onion, garlic, egg, parsley, paprika, salt, and pepper until well combined.

Step 2 – Stuff the Peppers

Cut the tops off the peppers, remove the seeds, and loosely fill each pepper with the meat mixture.

Step 3 – Make the Sauce

Melt the butter in a large pot. Stir in the flour to make a light roux, then add the paprika. Whisk in the tomato passata, broth, tomato paste, sugar, salt, and pepper until smooth.

Step 4 – Cook

Place the stuffed peppers into the sauce. Cover and simmer gently for 60–75 minutes, until the peppers are tender and the filling is fully cooked.

Step 5 – Serve

Serve hot with bread dumplings, mashed potatoes, or fresh crusty bread, spooning plenty of tomato sauce over the peppers.
