The dumplings are the star of the dish. Made with semolina and egg, they become soft and delicate as they cook in the hot broth.
Ingredients
For the Soup
- 2 tablespoons vegetable oil or butter
- 1 medium onion, finely chopped
- 2 carrots, diced
- 2 celery stalks, diced
- 1 small bell pepper, chopped
- 1–2 potatoes, peeled and diced
- 1 cup green peas
- 1 small tomato, chopped
- 1 teaspoon sweet Hungarian paprika
- 6 cups chicken or vegetable broth
- 1 bay leaf
- Salt and black pepper, to taste
- 1 tablespoon chopped fresh parsley
For the Semolina Dumplings
- 2 large eggs
- ¾–1 cup fine semolina
- Pinch of salt
- 1 tablespoon chopped parsley, optional
